Rainbow Chard Bright Lights

This Chard is so pretty, I even forgot that I still might believe I don't like Chard. It's just a left over dislike from back when I was sure Brussel Sprouts and Zucchini were going to kill me.
Cooked with cheese it was just fine. After all, cheese fixes everything
BAKED CHEESY CHARD AND OR SPINACH

What You Need:
1 1/4 pounds spinach AND/OR chard (this is a recipe where you can easily use only chard, in place of spinach.)
1/4 cup all-purpose flour
3 eggs, beaten
3/4 cup shredded Cheddar cheese
1/2 cup dried bread crumbs
2 tablespoons chopped fresh parsley (optional)
1/4 cup butter, melted
1 cup milk
1/2 teaspoon salt
1/8 teaspoon ground black pepper

1 Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
2 Clean greens thoroughly. Remove all excess water. Chop. Arrange greens and flour in layers, nestle beaten eggs about midway between the layers.
3 Combine cheese and bread crumbs. Mix in optional parsley, if desired. Sprinkle over top of greens. Mix butter or margarine, milk, salt and pepper. Pour over all ingredients. Bake at 350 degrees F (175 degrees C) oven for 50 minutes to one hour.

Grampy doesn't live here anymore but it was his birthday so I made apple crisp to celebrate his 89th birthday anyway.

Now I'm ready to get started.


I like cinnamon but not too much of it.

I'm out of brown sugar So I made my own brown sugar with molasses and white sugar.

It looks about like brown sugar now.


Ready for the oven.

Let it cool a bit before eating.

Top with maple syrup whipped cream and serve.

Ingredients
  • 12 apples
  • 2 table spoons -1/4 cup maple syrup
  • 1 tablespoon cinnamon
The topping
  • 1 1/2 sticks butter
  • 1 1/2 c.oats
  • 1 1/2 c. flour
  • 1 1/2 c. brown sugar
  • 2 table spoons lemon zest

Bake at 350 for about an hour

 I tried really hard to remember what was in the mozzarella tomato salad I had One time at EarthFare. I really can't remember. I just know it was good and it was around supper time and the fresh mozzarella in there was soo good.
I didn't have any FRESH mozzarella so I got out Polly-O. I do have a recipe for fresh mozzarella but I haven't felt bold enough to try it yet.
  I went out for basil but I got a little distracted with the Cosmose.

 They were begging me to take pictures of them

So I did.
Then I did go inside and wash the basil

 I'm really not good at taking photos with my left hand, the buttons are all in the wrong places.

I cut up the tomatoes and





 I tried to think of what else might've been in the salad.
 I kind of thought there was garlic but I can't be sure

 So I compromised with garlic powder and some herb salt to taste.

 Then I served myself to see if I liked it. I did.

So I had some more.
It apparently isn't all that manly of a salad because none of the guys went for it.
Can't please everyone.

Ingredients
  • 1 or 2 or a bunch of cherry tomatoes
  • 1/4 Mozzarella
  • 3 or 4 handfuls of Basil 
  • 2-4 tablespoons Olive oil
  • Salt to taste
  • Garlic powder to taste

I don't officially like chocolate I also don't dislike it either. But I liked these quite well.

 
Two sticks of butter, now I know this is going to be good.

I don't like to mix dry and wet ingredients in separate bowls. Something about dishes.
Whole organic rolled oats, not the quick ones



Then just to be sure I didn't dislike chocolate chips I had few right out of this bowl


And maybe just a couple more to be sure that I AM indifferent to them.


I had to add a little more flour and oats


 I don't like orange and I won't wear it on Saturdays in the fall even if every single person in the whole state does.


But in good team spirit or something like that I picked out all the orange M&Ms I could find to top the cookies and said Go Vols I know these cookies are going to be winners.


I'm at a loss as to what team might be lime green if anyone can help me out I would feel much more knowledgeable



Oatmeal chocolate chip cookies
· 1 cup butter, softened
· 3/4 cup packed brown sugar
· 3/4 cup granulated sugar
· 2 eggs
· 2 teaspoons vanilla extract
· 1 1/2 cups all-purpose flour
· 1 tablespoon baking soda
· 1 teaspoon salt
· 1 package 12oz. chocolate chips or a little less
· 2-3 cups regular oats (not instant)
· Preheat oven to 375°
Ingredients:
Place sugars and butter in a large bowl; stir until well blended. Add vanilla and egg; beat until blended. Gradually add flour mixture, until combined. Stir in chocolate chips and oatmeal. Drop dough by tablespoonfuls 2 inches apart onto baking sheets. Bake at 375° for 9-10 minutes or until edges of cookies are lightly browned. Cool on pans 2 minutes. Remove cookies from pans; cool on wire racks.
