This is the first time I’ve ever had fresh figs right off a tree. So good! I’ve seen some beautiful recipes for fig tarts and I thought briefly about making something but  I hadn’t picked quite enough for tarts so I ate them one at a time. Yup,every single one of them and that’s the end of the fig story until I go visit again.

This little dog, is family. That was obvious the minute I saw them. Her daddy takes her where ever he goes. Her favorite spot is right there on his lap.

We took a little drive on the Blue Ridge Parkway this weekend. So many beautiful overlooks and so many beautiful views.

From the Waterrock Knob parking lot we went up the little trail, I did it in flip flops so it was pretty easy or I’m just too lazy to put shoes on for a .5 mile hike.

The light was just getting better and better as we drove along.

At another overlook there were a bunch of photographers already there. I set up next to this guy with camo legs (tripod)

We got talking as we waited for the light to change. He said he photographs birds and wildlife primarily. He said he was up here at 4 am waiting for the first light to photograph some kind of birds that are migrating right now. 

Then we got talking about lenses and how expensive they are.

He said he traded a fiancé for his current lens he shoots birds with.

I laughed and told him that was awesome! 

He laughed and said Yeah, her name is Danielle, she’s in the car.

Then I just had to meet Miss Danielle. I made him bring her out and properly introduce her.

My friend sent me this recipe and it looked super easy so I thought I’d give it a try.

Start by rinsing and draining  a can of garbanzo beans or chickpeas. Why do these thing s have two names?

In a blender or food processor add the peas.

Then find some peanut butter

and work on stirring it

without spilling any of the oil. Tricky, but I managed.

I’ve got this honeycomb so I put a little of that in.

and some honey from a jar that is a lot easier to deal with than the honeycomb.

Blend until smooth. Mine’s not really smooth.

stir them in.

take sticky blops and place on greased baking sheet with your hands.

Bake at 350° for about 10 minutes.

Let cool and then eat.

 

Peanut Butter Chocolate Chip Cookie Dough Bites

ingredients:
  • 1  can chickpeas, well-rinsed
  • 2 teaspoons vanilla extract
  • 1/2 cup chunky peanut butter
  • 1/4 cup honey
  • 1 teaspoon baking powder
  • a pinch of salt
  • 1/2 cup  chocolate chips

 

Preheat your oven to 350°

Combine all the ingredients, except for the chocolate chips, in a food processor or blender until very smooth. Make sure to scrape the sides to get the little chunks of chickpeas and process again until they’re combined.

Put in the chocolate chips and stir it if you can, or pulse it once or twice. The mixture will be very thick and sticky. With wet hands, form into 1 1/2″ balls. Place onto a greased baking sheet. Bake for about 10 minutes.
