Sometimes my meals are completely inspired by what’s in the garden. This is spinach parsley pesto with pine nuts and walnuts on cooked cabbage and carrots, edamame, fresh radish slices and Cabot cheddar cheese.

This year playoff hockey has been so much fun, all of my favorite players were on teams that made playoffs so I was sorta cheering for both teams, well really just mostly cheering for #26 in the blue shirt.

pico de gallo mango-1853

 

This is my new favorite way to eat mangos.

To make this Pico de Gallo you’ll need a mango, an avocado, a handful of parsley and cilantro if you have it,a few slices of red onion and  juice of a lemon.

Then you chop everything up.

toss it in a bowl.

Add lemon juice and mix together.

It’s that easy to make!

Put it in a bowl to serve

Or pack it up for a picnic and eat it with guacamole corn chips.

 

 

 

Mango Pico de Gallo

  • 1 mango
  • 1 avocado,
  • a handful of parsley and cilantro if you have it
  • a few slices of red onion 
  • juice of a lemon
  • pinch of salt

 

chop everything and toss in a bowl. Mix and serve.

So I went to see how many were there. But by the time I’d squizzled under the fence and got my hair caught on the barbed wire and got it un caught they were gone!

red cabbage tofu smoothie-19473

 

This isn’t a smoothie, this is a frozen desert! Easiest way to eat red cabbage ever.

I’m not a fan of raw cabbage so I had some reservations about this recipe from ThepioneerWoman but her photos were so good looking I had to give it a try.

I used tofu instead of yogurt. Not because I have anything against yogurt but because I had an open container of tofu.

Chop up the cabbage a little  before tossing into the blender.

Cut the strawberries into pieces if you’re using frozen.

Spoon in about 1/4 cup honey.

Toss it all in the blender and blend it all up until it’s all creamy.

Then serve yourself some.

Red Cabbage tofu smoothie

adapted from thepoineerwoman’s recipe

ingredients
  • 8oz tofu
  • 1-2 cups Frozen Strawberries
  • 1/4 head Red Cabbage
  • 1 whole Banana, Peeled
  • 1/4 cup Honey
  • 1 cup strawberry, Cranberry Or Grape Juice

 

Throw all the ingredients in a blender and mix until smooth. Taste and adjust sweetness, or thickness.  Add ice if it needs to be more "frozen."

I brought my camera with me along with the PhotoADay list thinking I’d get caught up on some of the daily prompts I’ve missed. 

Then I got distracted when I saw the bridge job. So I stopped to check on the bridge progress.

They had a yellow metal basket filled with rocks/crushed rock/grout or something being pushed over to the crane and pile drilling rig on the green floating raft in the middle of the water.

The crane reached down to pick it up.

The white hard hat and yellow vest hooked the cable

And set it down next to the pile drill rig.

Then the drill came up with the spiral bit on

swung over behind himself rotated it forward, backward

and when he swung back around he had a different drill bit on.

Back down into the hole it went.

back up. For what? I don’t know, I was way over on the sidewalk on the shore.

The white hard hats and yellow vests sat down, they talked on their phones. And watched it drill as the moon came out.

It got dark quickly and I realized these guys were probably going to work straight through the night so I headed home.
