Who doesn't love hummus?
Well, me, as a kid. I hated it. I could not believe all the adults were making such a big deal over something that tasted like garlic and lemon! I think I was envisioning something more along the lines of S'mores at the time. ...if you aren't imagining a graham cracker with a piece of chocolate and a melted marshmallow, hummus is quite lovely.

Sweet Potato Hummus

ingredients
1 medium cooked sweet potato
3 tablespoons olive oil.
2 cans cooked chickpeas rinsed and drained
3 tablespoons tahini.
3 cloves garlic, peeled.
juice of 1 lemon.
ground sea salt, to taste

Toss in a food processor and process until smooth.Serve with whatever your favorite dipping scooping food items are. I like fresh cucumber slices, corn chips, carrots, celery and tomatoes.

These Gluten free sweet potato burgers are even better with pepper jack cheese and fresh tomato!

I made these last week but was in a hurry so I didn’t take any photos. They were so good I made them again!

This is really quick to put together as a lot of the ingredients can be prepped in advance.

In a bowl add cooked sweet potatoes

and mash them up.

Then toss in the grated raw sweet potatoes,

chopped parsley,

oats,

corn,

roasted red bell peppers,

dates,

cilantro,

salt,

red pepper,

and cumin. Mix all together and shape into burger patties.

place on a greased baking sheet and bake at 350 for 40 minutes or so. Part way through turn over when medium brown.

Serve with all your favorite condiments.

I am liking these gluten free rolls made by LivWell made with tapioca starch, rice flour and potato starch. They taste pretty good too.

A couples slices of pepper jack cheese and a slice of tomato will be just about right.

Now we’ve got a sandwich!

 

Sweet Potato burgers

ingredients

  • 2 cups cooked mashed sweet potatoes
  • 1 cup grated sweet potato
  • 1 cup oats
  • 3/4 cup cooked corn
  • 3/4 cup chopped parsley
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped roasted red peppers
  • 1/4 cup chopped dates
  • 1 tablespoon chopped garlic
  • cumin, red pepper and salt to taste

In a bowl mix everything together.  If it's too soupy add a little more oats. Shape into burgers. place on a greased baking sheet and bake at 350 for 40 minutes or until medium brown. Turn over partway through.
Serve with your favorite condiments.

I  just tried making this Gluten free sweet potato hummus from a recipe in a Taste of Home magazine.  Only 7 ingredients and very quick to make. It was great! I’ll be making this again for sure.

I just sliced up some cooked sweet potatoes I was too lazy to mash them first.

Sliced a couple cloves of garlic.

Place Into a mini food processor, but you should use a full sized one if you have it

A portion of the sweet potatoes. I started feeling sorry for the mini food processor so I chopped the sweet potatoes up smaller.

Some cumin.

A pinch of Salt

Lemon juice.

Then I processed everything just to see if the mini could handle it. It was no problem at all.

So I added the cayenne,

and tahini.

And processed it all in batches until I had all of the sweet potatoes blended up nicely.

Then taste it, it’s part of the job.

Serve right away or make ahead.

 

Sweet Potato Hummus

adapted from Taste of Home

Ingredients

    4 cups mashed sweet potatoes
    1/4 cup tahini
    1/4 cup lime juice
    2 garlic cloves, minced
    2 teaspoons ground cumin
    1-1/2 teaspoons salt
    1/4 teaspoon cayenne pepper

Directions
  1. Place the first ingredients in a food processor; process until blended. Transfer to a bowl.

The best messy gluten free sandwich with ingredients I’ve never tried together before!

I was food gawking and saw alimentageuse.com’s recipe for Sweet potato  Pesto Grilled Cheese and had to try it.

I started by making the pesto. Got out some chopped walnuts,

lemon juice, parmesan, olive oil,

and kale with stems removed.

Into the blender I tossed the kale,

and walnuts.

I got it so it was fairly chopped.

Added salt and parmesan

Then added lemon juice and olive oil. Done.

Now it’s sandwich time!

I put a little butter on the outsides of the bread.

Turned it over and added some kale pesto to one slice of bread

And cooked sweet potato slices to the other.

Topped each slice with pepper jack cheese

put them to melt in the pan from the Catholic church fall bazaar sale that was only 5.00.

Warm oozy melty good.

But not exactly neat and mess free eating.

Best eaten with a fork.

 

Kale Pesto sweet potato Grilled cheese

ingredients

 

  • Gluten free bread
  • cooked sweet potato slices
  • kale and walnut pesto
  • Cheese slices

 

Butter the  bread slices on one side, then on the un-buttered sides, spread the kale pesto  on one slice of bread.
Add the sweet potato slices on the other half, place cheese on the sweet potato and pesto,
Preheat a pan on medium low heat.
Cook open faced until cheese starts to melt and bread browns.
Place cheese sides together and serve with a fork.
