Who doesn't love hummus?
Well, me, as a kid. I hated it. I could not believe all the adults were making such a big deal over something that tasted like garlic and lemon! I think I was envisioning something more along the lines of S'mores at the time. ...if you aren't imagining a graham cracker with a piece of chocolate and a melted marshmallow, hummus is quite lovely.

Sweet Potato Hummus

ingredients
1 medium cooked sweet potato
3 tablespoons olive oil.
2 cans cooked chickpeas rinsed and drained
3 tablespoons tahini.
3 cloves garlic, peeled.
juice of 1 lemon.
ground sea salt, to taste

Toss in a food processor and process until smooth.Serve with whatever your favorite dipping scooping food items are. I like fresh cucumber slices, corn chips, carrots, celery and tomatoes.

I finally made Edamame Hummus from the recipe Katrina’s mom gave me! This has been on the list for a while. well, since September. Aside from my garlic being kind of tired and unflavorful I thought it was close to the way Katrina’s mom made it.

gluten free sweet potao hummus-17973-3

I  just tried making this Gluten free sweet potato hummus from a recipe in a Taste of Home magazine.  Only 7 ingredients and very quick to make. It was great! I’ll be making this again for sure.

gluten free sweet potao hummus-17950

I just sliced up some cooked sweet potatoes I was too lazy to mash them first.

gluten free sweet potao hummus-17952

Sliced a couple cloves of garlic.

gluten free sweet potao hummus-17956

Place Into a mini food processor, but you should use a full sized one if you have it

gluten free sweet potao hummus-17957

A portion of the sweet potatoes. I started feeling sorry for the mini food processor so I chopped the sweet potatoes up smaller.

gluten free sweet potao hummus-17958

Some cumin.

gluten free sweet potao hummus-17959

A pinch of Salt

gluten free sweet potao hummus-17960

Lemon juice.

gluten free sweet potao hummus-17961

Then I processed everything just to see if the mini could handle it. It was no problem at all.

gluten free sweet potao hummus-17962

So I added the cayenne,

gluten free sweet potao hummus-17954

and tahini.

gluten free sweet potao hummus-17963

And processed it all in batches until I had all of the sweet potatoes blended up nicely.

Then taste it, it’s part of the job.

red pepper hummus-15731

I found this recipe for roasted red pepper hummus and decided to do a test batch. It was so good it was gone on no time so I had to make more. So this is the second batch.

red pepper hummus-15727

red pepper hummus-15678

Yes, a mini food processor! New Christmas goodies.

red pepper hummus-15680

Start with chopping some garlic.

red pepper hummus-15682

Remove stems from some parsley.

red pepper hummus-15687

drain 2 cans of chickpeas.

red pepper hummus-15689

Into the food processor or blender add parsley, lemon juice,

red pepper hummus-15690

garlic,

red pepper hummus-15691

olive oil,

red pepper hummus-15692

salt,

red pepper hummus-15694

cumin, cayenne and coarsely ground pepper. Process until blended.

red pepper hummus-15697

Next add chickpeas and roasted red peppers. If you’re using a mini food processor I suggest doing it in small batches.

red pepper hummus-15699

I found only filling it about half full worked best and it didn’t make that funny noise like it might just stop at any point.

red pepper hummus-15723

Toss in sesame seeds and serve with pita chips or carrots if you’re going gluten free and don’t have any gluten free pita chips.
