gluten free tomato+avoado+feta sandwich

 

Super quick sandwich on toasted gluten free bread.

Feta, tomato and avocado have got to be my favorite flavors in a sandwich. I know, I have a lot of favorites, so how about, this was the BEST lunch I had today!

 

All you need:

a couple slices of gluten free bread, toasted

butter

feta cheese

1 or 2 tomato slices depending on tomato size

avocado slices

Whatever you have in season will work. The cherry tomatoes are just starting here.

I like to remove the seeds and extra drippyness.

I used cream cheese even though I think feta would be nice too.

On a gluten free wrap or a regular flour tortilla if you aren’t eating a gluten free diet spread some cream cheese.

then put some cucumber,

green beans,

tomatoes,

and fresh pesto.

Then roll it up.

Then I cheered, it didn’t crack and fall apart this time! I think I’ve figured something out about frozen Udi wraps, microwave them for a minute and a half and then they’re flexible and don’t crack when you roll them up.

Slice diagonally and eat right away. The pesto makes a drippy mess.

Green bean cucumber fresh pesto wrap

ingredients

  • gluten free wraps or a wheat flour if not eating gluten free
  • green beans, slightly cooked until bright green
  • cucumbers, cut into large sticks
  • tomatoes, sliced and seeded
  • cream cheese
  • fresh pesto
  • and any other seasonal items you feel the urge to use.

 

Warm wrap if using frozen. Spread cream cheese on, then put cucumbers, green beans, tomatoes and pesto down the middle and roll up. Slice diagonally, yes you must slice it diagonally it’s part of the recipe. Eat right away.

I was very excited when I found these gluten free wraps. I thought I was going to have to give up wraps to eat gluten free. That changed when I got these. For a few days I left them in the freezer just happy that I COULD have wraps if I wanted to. Finally I got them out and threw together some version gone astray of Ree’s wrap recipe.

I got out a piece of cream cheese and put it in a bowl to soften.

then headed to the garden for a handful of parsley.

Chopped it up with one of my new knifes. Yes, I got some new knives. Thanks Ellen!

Toss the chopped parsley in the bowl.

Then I ran back to the garden for a few onion tops.

Chopped them up

and added them to the bowl.

juice of half of a lemon.

Then I mixed it together and think a larger bowl would’ve been better.

If you have one of those julienner things use it, if not you can just chop you carrots real thin with a knife like I did.

a few red bell pepper slices,

a few orange bell pepper slices,

and a few green bell pepper slices.

Then get one of the wraps. If you dawdle as much as I do and you’d kept your wraps in the freezer they’d be thawed and then some by now.

Scoop out some cream cheese spread

and spread it around.

put some lettuce on,

a few carrots, some yellow peppers,

red peppers,

a few orange peppers, green peppers,

and a few slices of ham.

This is the sad part,

I started to cut then and it all cracked!

It was like there was no gluten  to help it hang together.

So they were more like 3 sided crumbly sandwiches.

They tasted all right though.

I think next time I will try using these gluten free wraps as quesadillas maybe cheese will hold it all together.

 

 

Crumbly Gluten Free Wraps

 

ingredients

  • Udi gluten free wraps
  • 8oz cream cheese
  • 1/4 cup chopped parsley
  • 1 tablespoon chopped onion tops
  • juice of half of a lemon
  • salt and pepper to taste
  • 1/4 yellow bell pepper julienned
  • 1/4 orange bell pepper julienned
  • 1/4 red bell pepper julienned
  • 1/4 green bell pepper julienned
  • lettuce leaves
  • lunch meat slices

 

In a bowl, mix cream cheese, parsley,  onions, and lemon juice.

Spread cream cheese spread on wrap, layer on vegetables and lunch meat. Roll up and slice. Serve right away or make ahead. They don’t get any more crumbly sitting in the fridge.

This simple Guacamole grilled cheese sandwich is every bit as good as it looks!
One warning though, it is one messy thing to eat. You either need a fork or to be eating it around people you’re comfortable licking your fingers in front of.
Now that you are informed about the dangers, here’s how it was made:

Butter one side of each piece of bread.

place some cheddar on each side

Place fresh Guacamole one one side.
Grill each piece of bread butter side down until cheese is melty. Then place the just cheese piece of bread on to the cheese and guacamole bread. Over low or no heat let warm until cheese is dripping out.

Eat warm.

  • sour dough bread or any bread really
  • fresh guacamole
  • cheddar cheese but I prefer Cabot cheddar

turkey left over sandwich-2027

 

Turkey and cranberry have always been some of the highlights of Thanksgiving dinner for me and leftovers are just as good.

A couple of  slices of whole wheat multi grain bread,

a couple of slices of canned cranberry sauce,

Some extra sharp cheddar,

a little salt and pepper to taste,

a leaf or two of romaine and we’ve got a sandwich!

I really like these barbecue flavored sweet potato chips from some brand I’d never heard of before called Food should taste good. If you have any sweet potato chips they’ll go nicely with a left over turkey sandwich.

There were more on the plate when I started but I kept eating them as I was making the sandwiches.

Eating this sandwich turned out to be a bit messy, the turkey squished out one side, the lettuce and cheese went out the other and cranberry sauce dripped everywhere.

It was very good, drips and all.

 

 

Leftover Turkey Sandwich

Ingredients

  • Whole grain bread
  • leftover turkey
  • leftover cranberry sauce
  • cheddar cheese
  • romaine lettuce
  • salt and pepper to taste
