Fresh guacamole with chips made from corn tortillas.

All you need is a handful of fresh cilantro,

some ripe avocados,

peeled

and mashed,

You need that cilantro chopped

and mixed into the mashed avocado.

If you’re a wimp and afraid of spending the whole afternoon crying just cut a few onion slices.

Mince them up and add to the avocado and cilantro.

Add lemon juice in the neighborhood of a 1/4 cup plus or minus.

season with salt and cumin to your liking.

Garnish with cherry tomatoes.

For the chips, cut 6” corn tortillas

into pieces.

heat some oil in a pan and fry them until lightly golden. I found I liked the strips better, they were easier to turn.

Oh, and don’t touch the hot spatula that was just in the hot oil! You can burn your finger that way. Just thought I’d mention that.

Serve warm, they’re very munchable.

 

Guacamole

Ingredients

a handful of cilantro chopped

2-3 ripe avocados

a few slices of red onion

lemon juice, salt, and cumin to taste

Cherry tomatoes for garnish

 

Peel and mash avocados. Add chopped cilantro, lemon juice, salt an cumin. Mix together and see if you like the taste. If not add more of something and taste again.

 

Tortilla chips

ingredients

6” corn tortillas

oil for frying

 

Cut tortillas in pieces. Heat oil until is just starts to have a tiny bit of smoke coming off the top. drop in tortilla pieces. stir to separate pieces. until starting to brown. Remove and drain on paper towels. Eat warm with fresh guacamole.

No-bake gluten free mango kiwi lime mini pies. Made with, oh wait eat one first. Then I’ll tell you what’s in it.

Erica made these cute tasty little key lime pies as munchies for us. After the first bite I knew I had to make some myself!  So here is my version.

The recipe didn’t have a mango in it but I had this mango that really wanted to be part of the pie so in it went.

Then a few spoons of honey.

Next avocado and lime juice,

Then coconut oil.

Then I remembered I wanted to make something with tofu! So I put half of the tofu in.

About that much and blended it all up.  Actually it was too full and I had to take some out and do it in two batches.

I scooped it out and set it aside.

Now for the crust, you just need some dates,

almond flour,

a pinch of salt and a pinch of cayenne.

Process it until it’s fine crumbs.

Spoon the crumbs into muffin papers

And press into place.

Spoon the filling in

and top with a kiwi slice.

Freeze for 1-2 hours.

When ready to serve, bring out to room temperature for about 5 minutes before eating if you left them in the freezer longer than 2 hours and they are hard.

Mango kiwi lime pie

Adapted from RunHardEatClean’s recipe

Filling:

  • 2 Avocados, peeled and cubed
  • 1 mango peeled and cubed
  • 6oz. tofu
  • 3 Tbs Lime Juice
  • 1/2 Cup Coconut Oil
  • 3-4 Tbs Raw Honey

Crust:

  • 1/2 Cup Almond flour
  • 1/2 Cup Dates (not soaked)
  • Pinch of Salt
  • Pinch of Cayenne

kiwi slices for garnish

 

Blend all filling ingredients together. Set aside.
For the crust, process dates, almond flour and salt/cayenne) together until smooth(ish).
Press the crust into greased or lined muffin tins.
*Spoon in filling and top with a kiwi slice. Freeze for 1-2 hours.  if it freezes hard, just leave out for 5 minutes before eating

gluten free tomato+avoado+feta sandwich

 

Super quick sandwich on toasted gluten free bread.

Feta, tomato and avocado have got to be my favorite flavors in a sandwich. I know, I have a lot of favorites, so how about, this was the BEST lunch I had today!

 

All you need:

a couple slices of gluten free bread, toasted

butter

feta cheese

1 or 2 tomato slices depending on tomato size

avocado slices

Going gluten free has gone pretty well this past week for me, even though I did have to force myself to walk away from some pasta that was taunting me.

Oats and avocado together are my favorite smoothie ingredients lately.  I think strawberries add a lovely flavor to any smoothie.

In a blender, add avocado,

orange juice concentrate,

and honey. If you want to feel more healthy you could toss in some flax meal or something like that. Blend until smooth. Add some water if it’s getting too thick to continue blending. When the oats and berries are smooth add ice and more water until you like the taste and consistency.

Serve right away or make ahead.

 

 

Strawberry Oat Smoothie

ingredients

  • 1/2 cup rolled oats soaked in 1 cup hot water
  • 1/2 avocado
  • 1 cup frozen strawberries
  • 2 tablespoons raw honey
  • 1 tablespoon orange juice concentrate
  • 2 cups ice cubes
  • 1/2 cup water

 

In a blender add oats, avocado, honey, strawberries, orange juice concentrate and a little water and blend until smooth. Then add ice and water until you like the taste and consistency. Serve right away or or make ahead.

This simple Guacamole grilled cheese sandwich is every bit as good as it looks!
One warning though, it is one messy thing to eat. You either need a fork or to be eating it around people you’re comfortable licking your fingers in front of.
Now that you are informed about the dangers, here’s how it was made:

Butter one side of each piece of bread.

place some cheddar on each side

Place fresh Guacamole one one side.
Grill each piece of bread butter side down until cheese is melty. Then place the just cheese piece of bread on to the cheese and guacamole bread. Over low or no heat let warm until cheese is dripping out.

Eat warm.

  • sour dough bread or any bread really
  • fresh guacamole
  • cheddar cheese but I prefer Cabot cheddar
