My new favorite version of quinoa salad!

Super easy too.

All you need is cooked quinoa,

chopped avocado,

yeah and a bowl. Ok, where was I?

Some diced tomatoes with green chilies,

juice of a fresh lemon,

chopped mangos,

some of the Red Gold petite diced tomatoes in garlic and olive oil that Red Gold sent me. They are a nice size of can when you’re making a small batch. These are really tasty!

Mix it all together and season with salt to taste.  Put in a bit of the tomatoes in garlic and olive oil juice taste it, see what you think then add a little more if it’s still seems a little dry.

Serve and enjoy.

 

 

Quinoa Salad with mango

ingredients

 

  • 2 cups cooked red quinoa
  • 1 avocado cubed
  • 1/4 cup Red Gold petite diced tomatoes with green chilies drained
  • 1/2 cup Red Gold petite diced tomatoes with garlic and olive oil and some of it’s juice to taste
  • juice of 1 lemon
  • 1/2 cup chopped mangos.
  • pinch of salt

 

Mix together and serve.

These Gluten free sweet potato burgers are even better with pepper jack cheese and fresh tomato!

I made these last week but was in a hurry so I didn’t take any photos. They were so good I made them again!

This is really quick to put together as a lot of the ingredients can be prepped in advance.

In a bowl add cooked sweet potatoes

and mash them up.

Then toss in the grated raw sweet potatoes,

chopped parsley,

oats,

corn,

roasted red bell peppers,

dates,

cilantro,

salt,

red pepper,

and cumin. Mix all together and shape into burger patties.

place on a greased baking sheet and bake at 350 for 40 minutes or so. Part way through turn over when medium brown.

Serve with all your favorite condiments.

I am liking these gluten free rolls made by LivWell made with tapioca starch, rice flour and potato starch. They taste pretty good too.

Sweet Potato burgers

ingredients

  • 2 cups cooked mashed sweet potatoes
  • 1 cup grated sweet potato
  • 1 cup oats
  • 3/4 cup cooked corn
  • 3/4 cup chopped parsley
  • 1/2 cup chopped cilantro
  • 1/2 cup chopped roasted red peppers
  • 1/4 cup chopped dates
  • 1 tablespoon chopped garlic
  • cumin, red pepper and salt to taste

In a bowl mix everything together.  If it's too soupy add a little more oats. Shape into burgers. place on a greased baking sheet and bake at 350 for 40 minutes or until medium brown. Turn over partway through.
Serve with your favorite condiments.

It came with some recipes too. I will probably be modifying them into gluten free recipes that taste a lot like what I normally eat, but at least I’ll like them.

These gluten free quinoa stuffed tomatoes look good, taste good and only take a few minutes to make.

Please excuse the unique markings on some of these tomatoes, this is from when it was dry for days and then it rained so much the tops split.

You start by slicing off the tops of the tomatoes.

Anyway, scoop out the insides

of all the tomatoes and set aside.

This is a great recipe for using up cooked left overs.

In a bowl, add quinoa,

corn,

beans, they were supposed to be black beans but when they came out of the can they look brown to me. But it doesn’t really matter.

Then add cooked sausage with kale and onions.

Mix together.

Wait, almost forgot the cheese! Add cheese.

And cumin.

And salt and pepper to taste. and mix all together.

Place tomatoes in a pan

and spoon the filling into them.

Leaving a little room for more cheese and parsley.

Top with chopped parsley

and maybe a little more parsley and a little more cheese.

Then bake at 350 for 15 minutes or so or until the cheese is melted and starts to turn brown.

Quinoa Stuffed Tomatoes

Ingredients

  • 10- 12 tomatoes
  • 1 cup cooked quinoa
  • 1 cup cooked and drained corn
  • 1 cup cooked beans, any beans you like really
  • 1 cup cooked sausage, kale and onion
  • 1 cup cheese divided
  • 1 teaspoon cumin
  • salt and pepper to taste
  • chopped parsley

Slice tops off tomatoes and remove insides.

In a bowl add quinoa, corn, beans sausage mixture and about 1/2 cup of cheese. Season with cumin, salt and pepper to taste and mix all together.  Spoon into filling tomatoes top with parsley and cheese. Bake at 350 for 15 minutes or until cheese is melted and starting to brown.

Best served warm but cold isn’t bad either.
