Mash strawberries with a potato masher.

meanwhile the the jars are ready sitting in their hot water but not boiling hot water on the stove.

The sugar, yes, ALL that sugar is the only way to make it work.

Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar.

Return to full rolling boil and boil exactly 2 minutes, stirring constantly.

Skim the bubbles

and put into a separate jar because bubble jam still tastes real good on toast even if it doesn’t LOOK perfect.

Ladle immediately into prepared jars, filling to within 1/4 inch of tops.

Place lids and screw on tightly.

Turn filled jars upside down on a dish towel and start timing for 5 minutes.

And sometimes recycling jars and lids doesn’t work. The leaky one got dumped back into the pot and put into another jar.

Keep filling hot jars until it’s all gone.

After 5 minutes turn jars to upright position and let jars set for 24 hours untouched.

Strawberry Jam
  • 5 cups prepared Strawberries
  • 1 box  JELL -ease Fruit Pectin
  • 4 tablespoon lemon juice
  • 1/2 tsp. butter or margarine (optional)
  • 7 cups  sugar, measured into separate bowl

Directions
Using a 1 C. measuring device, measure the 7 cups of sugar out into a medium bowl and set aside. This will allow you to pour the sugar while stirring the strawberries to prevent scorching. Pour all strawberries into a large bowl and mash until they are pulp-like. Using the same 1 C. you used to measure sugar, now use it to measure out 5 cups of mashed strawberries into a 6-8 quart pan. If the fruit is a little short in the last cup add water to make up the difference. The relationship is important to use the same 1 C. measuring device.
On medium heat, start cooking the strawberries. Add lemon juice,  and then  1 pkg. of Jel-Ease pectin slowly while stirring the strawberries constantly. Add butter to reduce foaming, if desired. Bring just to a boil. Start adding the sugar a little at a time while stirring as not to scorch. Continue stirring until mixture comes to a full rolling boil that cannot be stirred down.  Continue cooking and stirring constantly for exactly 2 minutes. Remove from heat and  quickly skim the top to remove foam.
Immediately fill hot jars to 1/4 inch from top. Place lids and screw bands on tightly. Turn filled jars upside down on a dish towel and start timing for 5 minutes. After 5 minutes turn jars to upright position and let jars set for 24 hours untouched. After 24 hours, make sure all jars are sealed. Store in a cool place.
 
You will need 5 wide mouth pint jars with lids and bands, Sterilize by boiling jars for 10 minutes and keep hot until ready to fill. Place lids and bands in hot (but not boiling) water until ready to seal jars.

What is HDR? Well, it looks cool.
I know this much, I need three photos of the same thing

One under exposed

one over exposed

and one just regularly exposed. 

(To make this collage I used Picasa because it is SO easy to make a collage and it’s free) 
Then in Photomatix I select the three photos and tell it to align based on features, that  way if I moved a bit while taking my three photos it’ll do it’s best to line them up. It kinda stacks the photos on top of each other and then you can run these adjustments on how dramatic of a look you want.



A little over the top, maybe. I like it on this bus.I did a more subtle HDR on a waterfalls photo. I was inspired by some beautiful waterfalls photos nicely HDR-ed by a photographer from Nashville. Mine wasn’t nearly as nice as his
but I’ll keep working on it.

This looks like little gnomes might come hopping out any minute.
Or maybe trolls.

sneaky snake-2

I guess he lives here, he came out of the garden! I think it’s called a Black snake or a chicken snake.
I don’t know, I guess I live under a rock,
but not the rock that the snake was living under all winter!
I’d never heard the Sneaky snake song until two days ago.

“…Well, sneaky snake drinks root beer, and he just makes me sick
When he is not dancin’, he looks just like a stick
Now, he doesn’t have any arms or legs, you cannot see his ears
And while we are not lookin’, he’s stealin’ all of our beer…”

I immediately thought of certain relatives who most undoubtedly do not like snakes! And thought this song is for them.

I ran over Sneaky snake’s identical twin, I swear it looked just like him! lounging crossways in the road, stretched out about 4’ in length. I guess the twin took it literally when he was told go play in traffic. Only thing was I didn’t know he was Sneaky snake’s twin until I came home  and saw Sneaky snake leaving the garden.
As he was leaving he said something about God never told ME not to eat out of the garden.

Strawberry season is only complete with strawberry shortcake.


Butter and sugar.


Cream together

 Add egg

 vanilla

and milk

beat well. Then Combine dry ingredients  to the creamed mixture.

I use the butter wrapper to grease the pan. My mother always did it that way. If you think that's being too frugal that's OK.

Pour into pan.


Spread in a greased 9-in baking pan. Bake at 350° for 20-25 minutes.

Slice up some straw berries.

Add a little maple syrup to them.

Pull the cake out and let cool on a wire rack not a pot holder!

 Don't let bossy people tell you what to do.

Whip some cream

Add a few tablespoons of maple syrup as it starts to thicken.

This is the important part:
Split each serving horizontally and fill with whipped cream and strawberries. Replace top of cake; garnish with more berries and a dollop of whipped cream. Serve immediately.

Strawberry Shortcake

Ingredients
•    2/3 cup sugar
•    1/4 cup butter
•    1 egg
•    1 teaspoon vanilla extract
•    1/4 teaspoon salt
•    1-1/2 cups all-purpose flour
•    2 teaspoons baking powder
•    1/2 cup milk
•    Whipped cream
•    1/8 cup maple syrup
•    1-1/2 quarts fresh or frozen strawberries, sliced
Directions
•    In a bowl, cream sugar and butter. Add egg, milk and vanilla; beat well. Combine dry ingredients  to the creamed mixture. Spread in a greased 9-in. square baking pan. Bake at 350° for 20-25 minutes. Cool on wire rack.

I like to play around with my photos and see what happens. This morning I took some photos.

It looked like this straight out of the camera. I'm not super awesome with a camera by any stretch of the imagination  yet so that's what it looked like.



Here, I increased the vibrancy a little bit and desaturated every color except blue.
I think it's fun just to be able to do this.
So I did.

The Larkspur SOOTC -straight out of the camera.

Cropped and added a little vibrancy. It helped the blue purple or is it purple blue? Well, it stands out, that's what it does.

Every once in a while I like a photo SOOTC -straight out of the camera and this is it, the one and only photo that I didn't have to adjust anything on!

I gave this a dreamier feel.
I brought the vibrancy up and the saturation down dont ask me what that does, it does something. They've got to be different otherwise there wouldn't be two options.
I look at it and if I like it I leave it.
I gave the highlights a yellow tint and the shadows a blue tint.

I promise I will never always do the dreamy thing to my photos!
I'll just do it sometimes.
