I opened the box and found that it’s sort of a thick crust.

I think that’s a great idea. But what else?

Alright, I’ve found a few things for pizza topping.

Start with a layer of cottage cheese,

Then sweet potatoes, parsley,

garlic,

Red Gold diced tomatoes with green chilies but not too many of them if you’re a wimp like me.

Some sausage slices,

red onion slices,

broccoli,

a bit more cottage cheese,

and top with shredded cheese.

Bake at 450 until topping is cooked and cheese is melted, 15 minutes or more.

Here is a pull back shot of my set up. North facing window light on my right, and a home made reflector to bounce light back onto the pizza from the other side.

Anyway, that’s how I did it. And now I think I’ll stop to eat some pizza.

P.S. the orange stuff is the left over sweet potato slices baked as sweet potato chips in the oven while the pizza was baking.

 

Broccoli Sweet Potato Pizza

ingredients

  • sweet potato sliced extra thin
  • cottage cheese drained
  • diced tomatoes with green chilies
  • sausage sliced
  • garlic sliced
  • parsley minced
  • broccoli florets
  • red onion sliced

Pre heat the oven to 450.

arrange cottage cheese, sweet potato slices, parsley, garlic, diced tomatoes, sausage slices, red onions, broccoli florets, and cheese onto crust. Bake until topping is cooked and cheese is melted, 15 minutes or more.

First time I tried this gluten free pizza crust mix. I was skeptical but really liked it. There’s no yeast in it so there’s no waiting for the dough to rise.

In a bowl, add oil,

the fork is useless and then work the last dry crumbs in with your hands.

I tore my dough in half for two smaller pizzas.

Press onto an ungreased baking sheet.

Real thin. There’s not going to be any rising of this dough so thin is best.

Top with whatever you have on hand and want to eat. Here, I used fresh pesto,

Baked it at 450 until the crust was starting to brown and the top cheese was getting golden.

Chebe Gluten Free Pizza Crust

Crust

  • 2 tablespoons of oil
  • 2 eggs
  • 1 cup of sharp cheddar cheese
  • 1 package of Chebe pizza crust mix 
  • 1/4 cup of water or milk

In a bowl, add oil, eggs, cheese, pizza crust mix and water or milk. mix until it get real sticky then kneed with your hands. Press real thin onto baking sheet. Top with your favorite pizza topping and bake at 450 until lightly browned on the bottom.

 

Toppings I used

  • pesto
  • roasted zucchini
  • broccoli
  • leftover rice
  • sausage
  • cheese

Some times I try making up new recipes or randomly making something from no recipe. I don’t always remember to take photos of each step and I don’t really worry about it because after all this is just a test recipe.

Most of these photos just get forgotten because it’s just a test pizza or tart.

So here’s what was on my camera:

I had these pretty little tomatoes, peppers and bacon bits. Looked like pizza to me. so I made some gluten free pizza crust without using a premixed package. …it wasn't so great, I have to work on it a bit more. So never mind about the crust.

I started with a layer of fresh pesto, a few slices of feta cheese sprinkled around,mozzarella and then tomato slices.

Topped it with bacon

and some bell peppers.

And cheese of course.

While that one was baking I started on another one.

This one I started with tomato sauce then layered feta, mozzarella, tomato slices and what was left of the green peppers.

One day I decided to make some tarts without a tart pan and no recipe.

I mixed some sour cream with some meat pie filling I’d discovered in the freezer.

Then just put slices of tomatoes on top and baked them.

I’d get right back to these recipes, but the tomato plants just died so it might be a while before I post the revised recipe.
