Take a friend to see their first hockey game. They just might like it even if they don't know what's going on.

Me: Uh, he ran into the big guy.

Me: I don't know. They just do that sometimes.

The Refs make them stop when someone falls down.


friend: How fast can they skate?
Me: On average players can skate at speeds in excess of 22mph. Some can skate up to 40mph!
 Don't cry, it's not your fault your name is Cryer. Yeah maybe that's not what he said  exactly.

 I think we have a new hockey fan.

Cashew Chicken stir fry. Pretty good and quick to make.

There are no photos of chopping the onions because onions make me cry. I know, I may have chugged on over to namby pamby land but it's a fact, onions make me cry.

Use regular cabbage if you don't have Chinese cabbage.

fry the chicken until chicken is cooked (2-5 minutes). Set aside.

Then throw in those onions and quick shut the lid before I drop any tears in! Kinda gotta open the lid to stir, after all it is a stir fry. Anyway sorry to get sidetracked on my teary eyed kitchen drama. The onions'll be cooked in a couple of minutes

I added just the cabbage because I'm using some rugged cabbage that needs to cook a little longer than the rest of the vegetables

Put the lid on and let it cook for a few minutes or until the cabbage is a little tender.


Return the chicken


Add ginger soy sauce to taste

Tasting time! 

cook and stir until heated through.


Stir in Cashews

Serve over rice on a blue plate.
                                                                Just kidding about the blue plate part.

Cashew Chicken stir fry
Ingredients
  • 2 eggs
  • 2 chicken boneless skinless breasts cut into pieces
  • About 4 cups of chopped vegetables
  • 1 cup cashews
  • a package of Chinese stir fry seasoning mix
  • up to 1/2 cup of water
  • ginger soy sauce to taste
  • a pinch of salt to taste

Beat eggs lightly and Add chicken pieces and stir well to combine. Set aside.
Chop vegetables.
In a large wok or frying pan, fry the chicken until chicken is cooked (2-5 minutes). Set aside.
Add the onion, in oil over medium-high heat (1-2 minutes)
Add vegetables to same skillet; cook and stir 4 minutes or continue stir frying until they soften.
Return the chicken. Add ginger soy sauce, water and stir fry seasoning mix.
cook and stir until heated through. Stir in cashews.

Serve over hot cooked rice, if desired. Garnish with fresh parsley.


         Ginger soy sauce
  • 3/4 cup soy sauce
  • 1/4 cup corn starch
  • 1/4 cup minced ginger
  • 1/4 cup minced garlic
  • a little honey
             make in advance.

I read some good reviews about WLW So I tried it. And it's free so why not.
Setting it up was pretty self explanatory. Plus, if I ever get in a jam I go watch a YouTube tutorial.

I love all of you who take the time to make how-to videos to help me out of jams and mental blocks!

 WLW has photo edges/frames boarders that are in Microsoft word! And it offers you the option to go with the default style of your blog too. Something called CSS, i wouldn't know but that's what they say. I like the drop shadow.
What I like best is I can easily choose what size I want to display my photo without going to the HTML and manually typing exact height and width. Click and drag! Blogger's editor only offers 3 image sizes and the large is is about 70 pixels too big for my blog layout so this is the best news for me! No more clicking on edit HTML, when I really don't know what I'm looking at.

But,
I must confess that I am writing this post on the blogger editor because, I'm a dork and forgot to open WLW.

 cookies from the recipe on the back of the white chocolate chip bag. 

 I like to start with the butter and sugar and eggs instead of mixing the dry ingredients in a separate bowl I put them in after and save myself from washing an extra bowl. After all, I am my dishwasher.

This is homemade vanilla and the black crumbs are bits of vanilla beans. 

Local chicken eggs so bright and pretty  

This is my mixer. Yeah, a fork with a meat and vegetable powered motor very low emissions. It runs on cookies too.

All the dry ingredients going in.

Somebody come quick and see if these chips are OK! Never mind I got it and I think they're, oh let me check a true random sampling here. Yep, They're good.

Drop by forkfuls or pull off with your hand.

I flattened them a little and off to the waiting oven they go. 

  I peeked in the oven to see what they were doing because it's always good to look.

When they came out of the oven all I could think was these may be the ugliest boringest looking cookies I've ever made.

 Look at them, nothing special about them at all. Something needs to be done

Cherries! Yes, a cherry will fix the next batch.

A half cherry on top and we've got a respectable cookie.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 2/3 cup NESTLÉ® TOLL HOUSE® Baking Cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) butter or margarine, softened
  • 3/4 cup granulated sugar
  • 2/3 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Premier White Morsels

Directions

PREHEAT oven to 350° F.

COMBINE  Beat butter, granulated sugar, brown sugar and vanilla extract in large mixing bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in Cocoa, flour, baking powder, salt. Stir in morsels. Drop by well-rounded teaspoon or fork onto ungreased baking sheets.

BAKE for 9 to 11 minutes or until centers are set. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

One dish salad has no recipe, it's always made from whatever vegetables are on hand and often includes some left over cooked vegetables that need a good home.

 Starting line up: Baby organic spinach and perfectly ripe avocado,

sliced tomatoes 

Sliced carrots

Left over asparagus and broccoli pieces. A sprinkle of cheese because cheese make everything good, here it's cheddar, though it often is feta or Parmesan. I just grabbed the shredded cheddar because it was there and I didn't want to spend the time looking for anything else if you've seen this fridge you'd know why!

top with you favorite Italian dressing.

suggested ingredients:
  • lettuce
  • spinach
  • Avocado
  • Asparagus
  • Broccoli
  • Brussel sprouts
  • carrots
  • cheese
  • croutons
  • celery
  • tomatoes
  • fresh parsley
  • fresh basil

you get the idea.
Go forth and eat salad!
