Georgia is a good sport and helped me out on the toothbrush photos. I was starting to feel sad that #photoadayJuly was over but Photoaday is not over! I’m very happy to find out that Fat Mum Slim is doing photoday for August too!

I’ve almost grown used to the crazy Kudzu that grows along the roadsides of Tennessee but every once in a while I stare at it like I did the very first time I saw it.

The boys, I use that term loosely there’s a girl who drives one of the haul trucks on that job, well I think it’s a girl anyway could be a guy with very pretty long blond hair for all I know. Anyway THEY  are still working on out on Highway 30 it’s looking better and better every day.

Please don’t ask me about the thing on top of that car, I have no idea what it is supposed to be.

Pear smoothie colored with beet juice. Lucy’s water bowl but for today I’m calling it a cup. Oh and the bug that fell into my smoothie while I was trying to take a picture of it.

basil feta pepper muffins-5909

Basil, Feta and Roasted red pepper muffins. As long as you’re not thinking desert these are very nice.

I did get some sort of sideways complaint from an anonymous muffin moocher that seeing bright red “goobers” in the muffins led him to believe that they would taste like cherries. I suppose you could make these with cherries and cream cheese. But that's not what I made and that’s a recipe for another time.

I first got the basil so it would have time to dry after washing it.

Chopped it up.

drained and chopped the peppers.

In a bowl add flour,

salt,

baking soda and baking powder.

In another bowl add olive oil,

oh, an egg quick run to the fridge and see of there are any eggs. I guess we aren’t running out of eggs.

anyway, crack one egg into the bowl.

pour in butter milk but if you don’t have any you could do like I did, just add a little vinegar to milk. And if somebody drank up the milk you could mix up some powdered milk. I was not going to let the lack of a few ingredients stop me from making these muffins!

Mix and pour into the dry ingredients. Just a little mixing. You do not need to stir and stir and stir. I got into stirring and stirring and watching the gluten strings form. They turned out fine but they might’ve been fluffier if I’d just combined the ingredients.

toss the basil in,

the feta and roasted red peppers.

just fold in. Fill greased muffin pans about 3/4 so there’s room for them to puff.

Bake at 375° for 16-20 minutes. Cool for 5 minutes before removing from pan to a wire rack.

Serve warm.

 

 

Basil, Feta & Roasted Pepper Muffins
Ingredients

from Taste of Home

  • 1 cup all-purpose flour
  • 1 cup whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup olive oil
  • 1/2 cup crumbled feta cheese
  • 1/2 cup chopped roasted sweet red peppers
  • 1/2 cup minced fresh basil

    In a large bowl, combine the flour, baking powder, salt and baking soda. In another bowl, combine egg, buttermilk and oil. Stir into dry ingredients just until moistened, don’t stir and stir like I did watching the gluten form with fascination. Fold in the cheese, peppers and basil.
    Fill greased muffin cups three-fourths full. Bake at 375° for 16-20 minutes. Cool for 5 minutes before removing from pan to a wire rack. Serve warm and ok cold too.

Georgia is really happy to have a new ball. Somehow she lost her others. Well it may, just may have had something to do with that yappy dog next door that comes out to bark every once in a while. she may have been on her way to fetch the ball but then stopped mid fetch to run down the hill to bark back to Yappy dog. And by the time They were done exchanging barks… the ball, What ball? Yeah Where’s the ball?

On another note, I’m disappointed that Old Navy seems to had discontinued my favorite 2.50 flip flops. I don’t know what I’ll do when these wear out.

 

But if that’s my biggest concern in life I guess things aren’t all that bad.

I found out that July is national ice cream month and the 21st is national ice cream day though there are conflicting reports that it might be the 15th but that’s ok you really have the whole month to celebrate.

Trying to find a stranger proved harder than I thought.

I first thought this guy’d do but he knew me! I didn’t remember him. shh, don’t tell him. There I was thinkin’ now all I’ve got to do is ask if it’s ok to take the picture, when he looked up and said hi and didn’t we just do tires for you, you have the blue truck right?

So back to square one, who do I not know?

Then I got talking to Addie and even though we’d never met before, we got talking and became friends right there. There was just no way she could count as a stranger.

After a bit I asked her if I could take a picture of her doll, the baby doll on the floor. She picked her up for me to see. I asked what her name was. She looked concerned, then said I don’t know just a minute l’ll ask my dad.

Dad Looked over and said I don’t know, maybe you never named her yet.

I suggested naming her Maya since that was the name of the last baby doll I’d met. She was going to give it some thought first I’m sure.

 

I asked Dad if it was ok to take pictures of his daughter and doll and explained that I needed a photo of a stranger and this doll seemed to be the perfect stranger since none of us knew her name!

While I was supposed to be photographing her aunt’s wedding I stopped to talk to Allia at the bouncy house. Yes, I know I told you I declined shooting a wedding, well it turned out they insisted I do it. So I did, I learned a lot and I’ll tell you more about the wedding soon.
Allia was riding a pretend horse.

I rode another pretend horse with her. Pretend horses are great because the horses don’t get tired and if they do get tired you can always get another pretend horse that isn’t tired.

Then she told me about the other horses by the fence. So we went over to the “horses” by the fence and fed pretend grass to them. We were doing such a convincing job that some wedding guest came by and assured me that there weren’t any horses on the other side of that fence.

The horse feeding came to an abrupt end when she spotted a boy sitting in the 4-wheeler, her 4 wheeler, well her aunt’s but close enough to hers.
Catch ya later horses! Off we went to the 4-wheeler at full two year old speed, and don’t let that make you think that is in any way slow!
