one dish salad

One dish salad has no recipe, it's always made from whatever vegetables are on hand and often includes some left over cooked vegetables that need a good home.

 Starting line up: Baby organic spinach and perfectly ripe avocado,

sliced tomatoes 

Sliced carrots

Left over asparagus and broccoli pieces. A sprinkle of cheese because cheese make everything good, here it's cheddar, though it often is feta or Parmesan. I just grabbed the shredded cheddar because it was there and I didn't want to spend the time looking for anything else if you've seen this fridge you'd know why!

top with you favorite Italian dressing.

suggested ingredients:
  • lettuce
  • spinach
  • Avocado
  • Asparagus
  • Broccoli
  • Brussel sprouts
  • carrots
  • cheese
  • croutons
  • celery
  • tomatoes
  • fresh parsley
  • fresh basil

you get the idea.
Go forth and eat salad!
