kale egg sausage bites-18798

Super easy to make these Kale egg sausage bites!

I did not measure any thing, just threw stuff in a bowl. I’m getting like my mother.

kale egg sausage bites-18806

I know I used

about 5 eggs

about 1/2 cup of blanched frozen kale because someone ate all the fresh stuff up last night in her salad!

about 1/4 cup of cooked sausage crumbled

about 1/4 cup cooked basmati rice

and salt and pepper to taste.

Baked it at 350 in little tiny muffin pans for um, I have no idea. I never really looked at the clock, I just took them out when they were getting golden around the edges.

kale salad-11773

I’m not a huge fan of raw foods in general but this raw kale salad is so good!

Kale is supposed to be very good for you in a bunch of ways. I did a little reading on what’s in Kale and found Kale has:
fiber
iron
magnesium
Vitamin K
antioxidants
omega-3 fatty acids
Vitamin A
Vitamin C
calcium

I also looked up health benefits of eating bacon and found Bacon Today that bacon is an Effective Mood Elevator: Bacon makes you feel happy, satisfied, blissful, which greatly reduces stress in our lives and effectively relieves the negative effects of frustration, self-deprivation and sense of lack in one’s existence.

So this salad perfect in so many ways.

To make this salad just remove kale from stems and tear into bite sized pieces. toss with peppercorn ranch dressing.

The best messy gluten free sandwich with ingredients I’ve never tried together before!

I was food gawking and saw alimentageuse.com’s recipe for Sweet potato  Pesto Grilled Cheese and had to try it.

kale pesto gluten free grilled cheese-14296

I started by making the pesto. Got out some chopped walnuts,

lemon juice, parmesan, olive oil,

and kale with stems removed.

Into the blender I tossed the kale,

and walnuts.

kale pesto gluten free grilled cheese-14303

I got it so it was fairly chopped.

Added salt and parmesan

Now it’s sandwich time!

I put a little butter on the outsides of the bread.

Turned it over and added some kale pesto to one slice of bread

And cooked sweet potato slices to the other.

Topped each slice with pepper jack cheese

put them to melt in the pan from the Catholic church fall bazaar sale that was only 5.00.

Even if your avocados aren’t beautiful it won’t really matter in a smoothie. Just scoop it out and put it in the blender.
