Bacon Spinach Mini Galettes

These cute little mini Gallettes had me at first sight. domesticfits.com has great pictures and post on how to make these (you should check her out too). I would’ve just eaten some of hers, I’m sure she’d share she looks like a nice lady but I don’t live anywhere near her so I made my own.

They were irresistible!

Cut butter into flour, sugar  and salt.

Stop when it’s the size of small peas.

Add the water a tsp at a time.

when it gets about like this it’s time to stop adding teaspoons of water ‘cause you cant UN-add the water. I know this for a fact. I’ve made my share of miserable crust.

Work into a ball, wrap with plastic wrap and chill in the refrigerator for at least 2 hours or freezer for 20 minutes if you’re in a hurry.

Roll out the dough and cut into circles. I got real fancy and used the lid from a parmesan cheese container.

Layer on feta

Chopped Spinach

And Top with Bacon pieces.

fold up the edges leaving the middle open.

Bake at 350 for 20 minutes.

Cool on wire rack and then sample one or two.

Bacon Spinach Mini Gallettes

Mildly adapted From domesticfits.com

CRUST

  • ·2 cups whole wheat pastry flour
  • · 1 tsp sea salt
  • · 1 tsp sugar
  • · 1 1/2 sticks of butter
  • · 1/3 cup ice cold water

combine 1 1/3 cup flour, salt, sugar and butter, cut butter until it’s the size of small peas.  add the water  a tsp at a time. Form dough into a disk, wrap with plastic wrap and chill in the refrigerator for at least 2 hours or freezer for 20 minutes if you’re in a hurry. Place your chilled dough on a well floured surface. roll out. Cut out  4 inch circles.

 

Filling:

  • 1/4 cup Feta cheese
  • 3/4 cup chopped fresh spinach
  • 1/4 cup bacon pieces

Add  goat cheese to each circle, chopped spinach, and sprinkle with bacon.

Fold the edges up over the filling, leaving the center open. Pleat and press the edges when necessary.

Bake at 350 for 20 minutes, or until the crust is a light golden brown.
